Quick and Easy

Usually, this is a type of listing for recipes, and they're prep time is a lot longer that it has listed. Well, I tried the following this weekend and it was the easiest and tastiest recipe that I have tried. It takes less time than to make breakfast. The thing that takes longest is shredding the chicken.


* 1 cup sour cream
* 3 to 4 tablespoons milk
* 1 3/4 cups Mexican salsa verde such as Desert Pepper Trading Company or Frontera (sometimes called tomatillo sauce; from a 16-oz jar)
* 1 3/4 cups reduced-sodium chicken broth (14 fl oz)
* 2 1/2 to 3 cups coarsely shredded cooked chicken (from a 2-lb rotisserie chicken, skin removed)
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 6 cups coarsely crushed tortilla chips (not low-fat, baked, or flavored; from a 16-oz bag) plus broken chips remaining in bag (about 1 cup)
* 1/2 cup crumbled feta (2 oz)
* 1/4 cup chopped fresh cilantro

* Stir together sour cream and just enough milk to get a thick pourable consistency.
* Bring salsa and broth to a boil in a 5- to 6-quart heavy pot over moderately high heat. Add chicken, salt, and pepper and cook, stirring, until chicken is heated through, 1 to 2 minutes, then stir in 6 cups tortilla chips and cook until chips are softened (but not mushy), about 1 minute.
* Transfer chilaquiles to a large platter. Sprinkle with feta, cilantro, and 1 cup broken chips and serve immediately, with thinned sour cream on the side.

I think the first two ingredients and first step is optional. I bought lite sour cream, without any thinning, and its fine.

Another good tasty and quick chicken recipe that I've tried a few weeks ago was this:

CARAMELIZED BLACK PEPPER CHICKEN
TIME: 10 minutes

* 2/3 cup dark brown sugar (unrefined)
* 1/3 cup fish sauce
* 1/3 cup rice vinegar
* 1/2 cup water
* 2 teaspoons finely grated garlic
* 2 teaspoons finely grated ginger
* 2 teaspoons coarsely ground pepper



* 1 or 2 fresh Thai chilis (to your taste!), halved
* 2 tablespoons vegetable oil
* 2 shallots, thinly sliced
* 2 pounds organic boneless, skinless chicken breasts, cut into small pieces (1/2”)
* 2 tablespoons coarsely chopped cilantro

In a small bowl, combine the sugar, fish sauce, vinegar, water, garlic, ginger, pepper and chili and reserve.

In a large skillet, heat the oil over medium-high heat and cook the shallots until softened and a bit brown, about 3 minutes. Add the chicken and stir-fry, browning it all over, about a minute. Add the sugar mixture and simmer over high heat until the chicken is totally cooked through, about 6 minutes. Stir in the cilantro and serve.

All things I have tried from Goop has a lot longer cooking time that it has listen. I dunno if Gwyneth has a super fast cooking stove and or oven, but whatevs. You know when its cooked.

I am not gym rat by any means. I have good months, where I go religiously three times a week as well as bad months, where I see the treadmill about three times a month.
This is what I have when I go to the gym:
- Water
- Headphones with a good workout mix
- A crap load of food when I get home because it makes me 100x more hungry than usual

Water Bottles:
- The new trend is getting an aluminum one. Why? Supposedly, the plastic (i.e. Nalgene ones that everyone already has) when heated up will leak chemicals or some kind of carcinogen into your water. I have not read studies on this and I can’t confirm its validity. I just don’t drink the water anymore after I know it’s been heated in the car. It’s not that hard. I suppose there’s an argument for it to stay cooler for longer too, but you can put ice in the plastic ones.
- Plastic bottles – I have two of these. A Nalgene and a Camelback.
o Nalgene – It holds more water than you can pee out. (32oz or something like that) This was my first one and it works great. I have not shattered or lost it yet which is amazing. It has a spout attachment for like $5 which I didn’t consider buying, but was the big reason why I bought bottle #2
o Camelback – really what it is a big f’ing sippy cup for adults. Why? Because I’m a klutz and spill water all over the effin’ treadmill when I try to walk and drink at the same time. Undoubtedly, it was only a matter of time before I slipped and fell on my butt. It has a bite valve, which is how you open the valve up. It doesn’t hold as much, and if you put anything else in it besides water, it’s a pain in the arse to clean up. Mine is currently out of commission right now cause I haven’t figured out how to get rid of the lingering tea stain in the valve, and I personally deem it unclean until I get it out.

Workout Mix:
This changes every so often. I find that the genius application on iTunes makes pretty decent lists when you have a song you like. I will probably continue making work out lists because I like changing it up, but this is what I’m enjoying now:

Food:
I really dislike bars. I don’t know anyone who is a food lover and likes bars, except Beth… but she’s abnormal. Kidding. (Love you Beth!) I’ve tried eating all kinds of gross tasting bars, taking two bites and then remembering why I don’t eat them. Anyways, I was at Trader Joe’s and a lady and I randomly shared our general dislike for bars, but she told me about Cliff’s 20g Builder’s Bar! I swear I would bear hug her if I ever saw her again because these are the tastiest bars evar! The only other bars I’ve tried that were fairly tasty were the Pria ones from Powerbar, but they’re some low calorie BS that doesn’t really cut it when you’ve had a good work out. They are also a bit more than your standard Cliff bar, but so worth it.
I only saw one flavor initially, so when I went to another TJs and found out there were three (chocolate, chocolate mint, and some PB one – you know the bar flavor trinity) I nearly peed in my pants cause I was so excited!

I have taken a long hiatus from blogging for a number of reasons:
• My day to day life didn’t really seem that interesting to write about
• Not really wanting to put myself out there for the world to read about
• Fear of who will actually read this, etc.
In any case, I haven’t really been reading people’s personal blogs mostly because those seemed to have died out amongst my friends. I’m going about it now with a different attitude and goal. To share the things that I’m interested in that may interest others, with a few ramblings of my own to share whenever the mood strikes me.
So basically, I like reading lists, tutorials/recipes, and reviews so I’ll have those. Who knows how long this will last because I’m so fickle, but I think it’ll be fun for awhile.

1. My class is full of girls, married people, mormons, and/or midwesterners. i've never met so many people from Minnesota, Idaho, Kansas, and North Dakota in my life.
2. My life is school, so I don't have a lot of other things to talk about =/
3. I updated my myspace for "fun" last night. Jesus.
4. My car said it was 122 F today. Fack!
5. I haven't watched more than an hour of TV this week. I should cancel my cable.
6. I love having my own computer speakers. My desk is so pimp =)
7. I hate Lenovo. Its been over a month since I've ordered my computer, and I'm still using Lappy. Grr!
8. Somehow, I feel like I have money now that I'm not AmeriCorp anymore. I'm not a scrub on foodstamps anymore. Yay!
9. I think my diagnostic kit is fun. Who wants me to take their blood pressure?!
10. Back to studying now, cause I'm going to rock this test tomorrow. B-itches.

1. If I hear "dry heat" again, I will shoot someone. That doesn't make it less hot! I miss being coastal.
2. Arizona is full of meth addicts. I gather this from the number of PSAs I've seen about meth addiction since I've been here.
3. (I've studied about ten hours today, and I'm still behind.) I never thought I'd miss undergrad days.
4. The person I've bonded here with is another 24 y.o. asian girl from California. Go figure.
5. I don't like people that have been in the military for an extended period of time. They make you have dress codes and have other unpleasant qualities about them.
6. I have a job now as a tutor because I'm crazy.
7. I really enjoy cooking.
8. I'm working out a lot more now. Mostly to keep me sane, not because I have more motivation to go to the gym. I heart body flow with Rob.
9. I'm over having short(er) hair. I need the next three months to fly by so I like my hair again.
10. No one is going to come to my white coat ceremony because they don't want to be in this heat. *tear* and I'm far away =(

Life is grand. Time for bed.

One good think about music is that when it hits you feel no pain.

I was planning on doing a music post, because good music makes the world go round, among other things, but I logged on and saw that Bekki had beat me to it. Whatever =)

The intro is really different from the rest of the song. Isn't it? maybe its just me. Go girls that rock!

2. Beyonce - Ring the Alarm
I like Beyonce with some grit to her. Yell on sister!

3. Dixie Chicks - Not ready to make nice
This song reminds me of Mike, and its a big FU to a lot of people publically. You gotta respect that the balls behind that.

4. Daft Punk - Technologic
Grass was telling me about how good they were at Coachella and I just got around to getting some of their stuff. I'm slow.

Timaland is the man with the crazy pop/hip hop beats!

Actually, I'd rent Gigli and Basic Instinct 2 too just so I can see how bad they were. We should have a bad movie night. Bring some of the worst movies you've seen/heard of, and we shall see what all the fuss was about.
